Hi, I’m Judy Forrester, and I’m in the midst of a love affair with chocolate. I’m fairly certain I’m not alone in this!

Chocolate & Me

 Having perfected my chocolate-making at home, a golden                  opportunity presented itself to turn my beloved hobby into a business … and I jumped at the chance. Before long, it was time to move my pots, pans and beans into a dedicated business premises; my quirky shepherd’s hut at the bottom of our garden.

 

I’ve poured time and love into choosing the perfect ingredients for my chocolate … with the enthusiastic assistance of my daughter, my husband, and more willing friends than you can sensibly fit in a shepherd’s hut. Our choice is an ethically sourced Belgian couverture, selected for its premium quality and superior taste. I take the greatest care and pride in my chocolate, producing in small batches to ensure that each and every bar and gift that leaves the hut is of the highest standard.

My Beans-to-Bar Chocolate Philosophy

QUALITY BELGIAN CHOCOLATE​

Chocolate is a ritual. The release of sweet, roasted aromas when you tease open the foil wrapper to reveal the buttery-smooth, glossiness of the bar within. The satisfying snap as you break off a square. The moment time seems to stand still whilst it melts in your mouth. There’s no seduction quite like it.

 

I take my chocolate seriously, making it in small batches to ensure it lives up to your chocolate ritual, and satisfies your cravings.

 

For this reason, I only buy high quality Belgian couverture from a discerning supplier; as dedicated to responsible and sustainable sourcing, as they are to fulfilment of our chocolatey desires. As well as its cocoa intensity and signature creaminess, the ethical integrity of the product is hugely important to me.

 

Now imagine a bright copper pan of liquid, velvety chocolate. My favourite moment … the point at which I get to handcraft potent blends of love, science and imagination. This tempering process can be quite unforgiving, with exacting requirements for melting, stirring, blending, and cooling. Each and every bar is made with the utmost TLC, and as the proverb says: the proof is in the eating!
